This romesco sauce is a smokey condiment made of charred red peppers that goes with just about everything... from vegetables, to chicken, to seafood, to steak; this sauce is a staple.  

  • 3 red bell peppers

  • 1 garlic clove roughly chopped

  • 2 T sliced almonds

  • 1 T sherry vinegar

  • 1/2 t smoked paprika

  • 1/4 C olive oil

Turn your gas stove or grill on to medium heat.  Place pepper directly on stove or grill grate.  Allow pepper cook until large char marks are apparent, flip pepper and repeat with all sides.  Char all three peppers.  Remove stem and seeds and discard.  Roughly chop bell peppers and add to blender along with garlic, sliced almonds, sherry vinegar, and smoked paprika.  Turn blender on and stream in olive oil until sauce combines.  Season with salt and cracked black pepper to taste.
