Quinoa Tabbouleh

Tabbouleh is a fulfilling grain salad full of herbs and lemon.  Great on its own, or alongside roasted meats and and vegetables.  

  • 1 C quinoa
  • 2 C water
  • 2 C parsley chopped
  • 1 C mint chopped
  • 1 C cilantro chopped
  • 1 lemon (juice & zest)
  • 1 garlic clove grated
  • 1/4 t cumin
  • 1/4 t corriander
  • 2 T olive oil

Add quinoa to a sauce pan at medium heat.  Stir occasionally, and allow grains to dry cook and toast until they a roasty fragrance becomes apparent, and the quinoa is a deep golden.  Add water, salt and pepper.  Turn to high, and allow to come to a boil.  Cover saucepan and turn heat down to low.  Cook for about 15 minutes, until quinoa is tender.  Set aside to cool.  Once cool, and quinoa to a large bowl along with the rest of the ingredients.  Mix together, and season to taste.
