Lemongrass Short Rib Lettuce Wraps

Beef chuck short ribs are braised in a slow cooker with lemongrass, coconut milk, ginger and spices. These rich lemongrass short ribs are passively braised for hours- then served with chiles, herbs, lime, and cucumbers, for a nice fresh contrast. The braised beef, rice, and accouterments are wrapped in whole butter lettuce leaves for a lovely bite.

Lemongrass Short Ribs

  • 1 1/2 lb. beef chuck short ribs (English style, bone-in)

  • 1 T unsalted butter

  • 1/2 can coconut milk

  • 1 large lemongrass stalk thinly sliced

  • 1/2 C water

  • 1 t sambal oelek

  • 2 garlic cloves roughly chopped

  • 1 T honey

  • 1/2 inch of ginger root grated

  • 3 T fish sauce

Melt butter in a cast-iron pan on high heat. Pat dry short ribs, and season with salt and pepper. Sear ribs in the butter until a nice crust forms on all sides. Transfer the short ribs to your slow cooker. Add coconut milk, water, sambal, garlic, honey, ginger, and fish sauce to a blender. Blend until combined; pour over short ribs. Cover slow cooker and set to cook on high for 5 hours (or low for 8). Once short ribs are cooked, discard bones, and pull the short rib meat. Store the short rib meat in any of the coconut milk/braising liquid left, and keep in fridge until ready to use.

Lemongrass Short Ribs Assembly

  • pulled lemongrass short ribs

  • 1 head butter lettuce

  • 1 C cooked long grain rice

  • 1 lime cut in half

  • mint and cilantro

  • 1 jalapeƱo thinly sliced

  • 1 cucumber julienne

On a large platter: pile rice on one half, and separated butter lettuce leaves on the other. Heat a skillet on medium-high heat. Add pulled short ribs and its saved braising liquid to the skillet, warm short ribs through, and allow to get crispy in parts. Pour the lemongrass short ribs and liquid directly onto the rice. Pile on mint and cilantro leaves, julienned cucumber, and lime wedges. Eat by wrapping a lettuce leaf with a bit of rice, short rib, and your choice of topping.

beer: A Czech-style pilsner pairs nicely with this hot dish.  The bright carbonation and floralness bitterness from hops does well to clean the palate.  Pilsners have a clean and prevelant malt backbone that counteracts the heat nicely.  Some beers to look for: Peak Organic Fresh Cut, Oskar Blues Mama's Lil Pilsner, von Trapp Bohemian Pilsner.
