An umami smash: king trumpet mushrooms are seared and basted in butter, served with black garlic lentils and a miso honey.

Black Garlic Lentils
- 1/2 C French lentils
- 2 C vegetable stock or water
- 2 cloves of black garlic finely chopped
Combine lentils, black garlic, and stock in a small saucepan. Bring to a boil, cover tightly and reduce heat to low. Cook for about 20 mintues; stirring periodically, and checking liquid level- add more if dried out and undercooked. Season to taste.
- 2 t white miso
- 2 T honey
- 1/2 t mirin
- 2 t soy sauce
- 2 T water
Combine all ingredients in a small sauce pan at medium-low heat. Continually whisk until miso has been incorporated. Continue cooking until sauce has reduced as is thick enough to coat the back of a spoon. Set aside, keep warm for serving.
King Trumpet Mushrooms
- 3 king trumpet mushrooms
- 2 T unsalted butter
- 2 sprigs of fresh thyme
Wipe any soil off of trumpet mushrooms with a dry towel. Cut and discard the very end of the stem. Cut mushrooms lengthwise. Score the cut-side of the mushroom in a 1/4" diamond pattern.
Add 1 T of butter and 1 sprig of thyme to a sauté pan, heat at medium. Place 3 mushroom halves cut-side down in the melted butter. Cook for about 2 minutes, or until mushroom has a hard sear, with deep color along its edges. Flip mushrooms, and baste with butter for 1-2 minutes, or until hard sear forms. Set mushrooms aside. Add remaining butter and thyme to saute pan, and repeat with the rest of the mushrooms.
Spoon half of the lentils in the middle of the plate. Position three mushrooms directly on top of the lentils. Drizzle miso honey around the black garlic lentils and trumpet mushrooms. Finish with black lava salt and basil flowers.
beer: Russian Imperial Stout. The roasted malts amplify the depth and richness of the black garlic, mushroom and miso. The slight booziness that comes with the higher alcohol content mirrors the sugars in the honey miso. Some beers to look for: North Coast Old Rasputin, Oskar Blues Ten Fidy, Victory Storm King.
