This dish is inspired by the lovely rotisserie chickens served at Peruvian Chicken joints. Cast Iron Peruvian Chicken is rubbed with a warming spice & herb mix and roasted on high heat. The chicken is served with aji verde and piles of cilantro. Honey Lime Potato Salad is a nice dish to serve alongside the chicken.
Aji Verde- "green sauce" can be made a few days in advance.
- 1 garlic clove grated
- 1 t cumin
- 1 T olive oil
- 1 t smoked paprika
- 1/2 t fresh oregano finely chopped
- 1 lime (zest)
- 1/2 t rice wine vinegar
- 1 t kosher salt
- 1/4 t cracked black pepper
- 1 free range whole chicken
Combine all ingredients (except chicken) in a small bowl. Rub paste all over chicken and in cavity. Place chicken, uncovered, in fridge overnight. Place a large cast iron pan in oven and preheat to 450°F. While oven and pan are heating, remove chicken from fridge. Once oven reaches 450°F, take cast iron pan out of oven, and place chicken in pan- breast-side up (no oil or additional fat is needed). Roast chicken for 25 minutes. Take pan out of the oven, turn oven down to 425°F, and flip chicken over in pan- breast-side down. Roast for 10 minutes. Remove chicken from oven again, flip chicken over in pan-breast-side up. Roast for 10 more minutes. Remove chicken from oven (internal temp. should be hitting 155-160°F) and remove from cast iron pan. Allow chicken to become cool enough to handle. Carve chicken into drumsticks, thighs, breasts, and wings- set aside.
Cast Iron Peruvian Chicken Plating:
- carved chicken - divided into 2 portions
- 2 large ramekins of aji verde
- 1 bunch of cilantro leaves- divided
- assorted peppers
- 1 lime halved
Place half of the carved chicken on each plate or tray. Serve with a ramekin of aji verde and a lime half. Scatter cilantro and chilis around chicken. Finish chicken with flake salt and cracked black pepper.

beer: Czech pilsner. A clean pilsner with some spicy floral notes really compliment the heat here. Some beers to look for: Great Divide Nomad, Peak Organic Fresh Cut, von Trapp Bohemian Pils.
