Jerk

This rub is made with tons of fresh herbs, peppers and onions; a perfect summer marinade for grilled chicken, pork, or just about anything.  Adjust the heat according to your preference, add some peppers, omit some peppers- it's up to you.  

Blend:

  • 1 C scallions (green & white parts) chopped
  • chili peppers: 1 scotch bonnet (or habanero) 3 jalapeƱos roughly chopped (use gloves when prepping)
  • 1 in. ginger root, microplaned
  • 5 garlic cloves chopped
  • 1/4 C fresh thyme chopped
  • 1/2 lime (the juice)
  • 1/2 C oil
  • 2 T soy sauce
  • 2 T brown sugar
  • 1 T kosher salt
  • 1 T pepper
  • 1 T apple cider vinegar
  • 1 T rum
  • 1 T allspice

Combine all ingredients in blender, mix at high speed until paste develops.
