yields 16 skewers
- 16 wooden skewers soaked in water for 30 minutes (to prevent burning on grill)
- 1 C balsamic vinegar
- 4 T dark brown sugar
- 1 microplaned garlic clove
- 1 T worcestershire
- 4 black mission figs quartered
- 1 bread cheese loaf
- basil, maldon salt to finish
Make balsamic glaze: Combine balsamic, brown sugar, garlic, and worcestershire in a heavy bottomed sauce pan. Bring to a boil, then lower heat to a slight simmer. Reduce until glaze coats the back of a spoon; set aside. Cut 16 medium-sized bread cheese; make sure pieces are large enough that they do not break apart when skewered. Skewer bread cheese, followed by fig- skewer from bottom of fruit through the top. Make all 16 skewers and set aside. Turn grill on to medium heat and oil racks. Cook skewers just until some grill marks are visible.
Plating: Arrange skewers on platter. Drizzle with balsamic glaze. Finish with torn basil leaves and maldon salt.
cocktail: Black Walnut Old Fashioned
beer: A Belgian dark ale works well here. Belgian dark ales, tend to be a touch on the sweeter side and have notes of dark fruits which will compliment the sweetness of the fig and the char from the grill. Some beers to look for: De Dolle Oerbier, Delerium Nocturnum, Dogfish Head Raison D'Être.
