Grilled Sambal Wings

Grilled Sambal Wings
  • 6 whole chicken wings
  • 4 T Sambal Oelek chili paste
  • 2 T honey
  • 1 T soy sauce
  • 1 t apple cider vinegar
  • 1 t fish sauce
  • 1 t white miso
  • 1 garlic clove 
  • 1 lime halved
  • cilantro leaves, thinly sliced red chili peppers for garnish

Combine sambal, honey, soy sauce, apple cider vinegar, fish sauce and miso in bowl.  Using microplane, grate one clove of garlic into mix.  Whisk until all ingredients are combined.  Marinate chicken wings for 3 hours in fridge.  Remove wings from fridge, set aside and discard excess marinade.  Oil grill racks.  Grill wings on indirect heat until skin is crispy and internal temp. reaches 165°F; set aside.  Grill both lime halves cut-side down, until grill marks are made. 

Plating:

Arrange grilled wings on platter.  Garnish with whole cilantro leaves and thinly sliced red chili peppers.  Serve with grilled lime.

beer: A Czech pilsner pairs nicely with this hot dish.  The bright carbonation and floralness bitterness from hops does well to clean the palate.  Czech pilsners have a clean and prevelant malt backbone that counteracts the heat nicely.  Some beers to look for: Peak Organic Fresh Cut, Oskar Blues Mama's Lil Pilsner, von Trapp Bohemian Pilsner.
