Mushroom Duxelles
  • 2 cups of mushrooms (cremini, baby bella, or button) finely chopped
  • 1 shallot minced
  • 2 T butter
  • 2 sprigs of thyme

Add butter to cast iron pan at medium heat.  Add mushrooms, shallot, and thyme.  Season.  Cook until mushrooms have turned deep brown and are reminiscent of a loose paste.
