Twig & Plums

Twig & Plums combines plum sake, a splash of black tea, damson plum and lemongrass cordial, and a squeeze of lemon to create a fruity, and rounded cocktail. It features a house made plum & lemongrass cordial; the fruits are softly heated with sugar- the result is a complex, tea-like cordial, perfect with sake.

Plum & Lemongrass Cordial

  • 3 C pitted and chopped damson plums (if you can’t find damson, substitute with a slightly tart plum- preferably something red or purple skinned)

  • 1 lemongrass stalk chopped

  • 2 C sugar

  • 2 C water

Add all ingredients to a heavy-bottomed sauce pan, stir.  Bring up to a boil- then decrease heat to medium-low, allowing for a soft simmer.  Simmer for about an hour, stirring occasionally.  Strain and discard solids.  Keep refrigerated for up to 3 weeks.

Twig & Plums

  • 3 oz plum sake

  • 3 oz plum & lemongrass cordial

  • 1 oz black tea

  • 1/2 oz fresh lemon juice

  • 1 damson plum, sliced

To cocktail tin, add plum sake, plum & lemongrass cordial, black tea, and juice from 1/4 lemon (1/2 oz.).  Add ice, lock tins, and shake well.  Fill a rocks glass with ice.  Double strain cocktail-using hawthorne strainer and fine mesh sieve, over prepared glass.  Garnish with damson plum slices.
