Prickly Prick

This neon pink cocktail smacks you with fruit- notes of watermelon, bubblegum, licorice, and smoke.

  • 1 1/2 oz mezcal
  • 1/2 prickly pear (scoop out pulp, discard peel)
  • 1/2 oz hibiscus tea
  • 1/2 oz star anise syrup (follow simple syrup recipe, adding 4 star anise pods during boil- let infuse overnight)
  • 1/4 lime

To cocktail tin, add mezcal, pear, tea, star anise syrup, and juice from 1/4 lime.  Add ice, lock tins, and shake well.  Fill a rocks glass with ice.  Double strain cocktail-using hawthorne strainer and fine mesh sieve, over prepared glass.  Garnish with lime wheel and star anise pod.
