Deep purple concord grapes are they star here. The grape is bright and intense with slight sweetness and a touch of musk; a clear sign of the season. Flight of the Concords combines muddled concord grapes, vodka, Spanish fino sherry, a splash of citrus, and a savory bay leaf simple syrup.
Bay Leaf Simple Syrup
1 C sugar
1 C water
4 bay leaves
Combine sugar, water, and bay leaves in sauce pan. Heat at medium high and stir until sugar and water combine. Remove syrup from heat and allow to come to room temperature. Allow the bay leaves to steep in the syrup for an hour or two. Strain out the bay leaves, and set syrup aside.
Flight of the Concords
8 concord grapes
1 1/2 oz vodka
1 oz fino sherry
1 oz bay leaf simple syrup
1/4 oz fresh lemon juice (1 wedge of lemon)
additional grapes and bay leaf for garnish
Add concord grapes to your cocktail tin. Muddle the grapes until they are all pressed. Add vodka, sherry, bay leaf simple, and fresh lemon juice. Add ice, lock tins, and shake well. Fill a rocks glass or small jam jar with ice. Double strain cocktail-using hawthorne strainer and fine mesh sieve, over prepared glass. Garnish with a few grapes and a bay leaf.
