Lavender & Matilda

This cocktail features a blueberry & balsamic shrub.  Shrubs, a drinking vinegar, are easy to make and are awesome in cocktails.  

Blueberry & Balsamic Shrub

  • 1 C blueberries
  • 1 C sugar
  • 1/2 C balsamic vinegar

In a glass bowl, or other non-reactive container, Combine blueberries and sugar.  Stir and smash the berries a few times, until they are all coated and a few bluberries have broken.  Place the berry sugar mixture in the fridge for about 30 minutes.  Take the mixture out and stir again.  Put the berries back in the fridge for another 30 minutes.  At this point, the berries should be macerated, and the sugar should be almost all the way dissolved (if not, wait another 30 minutes).  Add the balsamic to the mixture and stir.  Strain shrub syrup through a fine mesh sieve and set aside.


  • 1 1/2 oz vodka
  • 2 oz blueberry & balsamic shrub
  • 1 dash of lavender bitters (careful- a little goes a long way)
  • soda water
  • lavender sprig and glass stir stick to garnish

Prepare a highball glass: fill completely with ice.  Add ice, shrub, bitters, and vodka to your cocktail shaker.  Lock tins and shake.  Strain into prepared highball glass.  Top with soda water.  Garnish with lavender sprig and a drink stir stick.
