Spa Sipper is a light, fresh cocktail with green tea as it's base. Celery bitters enhance the vegetal qualities of green tea, while lemon and cucumber brighten everything up. This cocktail calls for a honey syrup: this can be made by following the method for simple syrup, replacing white sugar with honey.
- 1 1/2 oz gin
- 1/4 lemon cut into wedges
- 1/4 of small cucumber, quartered
- 2 oz green tea
- 1 oz honey syrup (follow)
- 1 dash celery bitters
- cucumber ribbon, mint, lemon to zest for garnish
Add lemon and cucumber to cocktail tin; muddle ingredients. Add gin, green tea, honey syrup, dash of celery bitters, and ice to tin. Lock cocktail tins and shake for about 20 seconds. Use hawthorne strainer and strain into mesh strainer (to catch lemon and cucumber pulp) over ice filled rocks glass. Garnish with skewered cucumber, and mint sprig. Make sure to slap mint sprig before garnishing; this helps warm up the mint oils so that it's fragrance is apparent everytime a sip is taken. Zest a lemon over top.
